Today is my lovely mother’s birthday. She is a constant source of support and wisdom in my life, and I figured she deserved something special to mark the occasion. I inherited the baking title in my family from my Grammy, so for every special occasion, it falls on me to whip up something delectable. It’s a heavy burden, but we all have something to bear, eh?
Anyway, usually I like to surprise my loved ones, but this August, I received a request. See, back in June I baked a cheesecake for my brother, and my mum loved it so much she requested one of her own. I baked her a …drumroll please…. caramel brandy cheesecake with a walnut crust!
I found a recipe at http://www.dianasdesserts.com/index.cfm/fuseaction/recipes.recipeListing/filter/dianas/recipeID/2281/Recipe.cfm, and it worked out beautifully. Diana’s recipe is delicious, but I made one change: I substituted brandy for bourbon. The switch worked just fine, and was more to my mother’s taste. She gave the cheesecake a double thumbs up 🙂
I find cheesecakes have a reputation for being tricky, and I have to admit, the first few I ever baked weren’t all that pretty. Oh, they tasted delicious all right, but were best in dim lighting. Now however, I am much more confident and have some tips tucked in my apron, which I may just share in some other post.
